Another Wild Earth Guardian Fund Raiser under our belt; with 215 guests in attendance  this year we bolstered our crew and had a seamless event. Again we prepared an all vegetarian menu with some Vegan items peppered in. Everything was delicious, the menu follows.

Passed Hors D’ oeuvres

Globe Grapes Topped with Local Whipped Goat Cheese

And Spiced New Mexico Pecans


Pan Fried Potato Latkes

With Apple Ginger Conserve


Baked Cremini Mushroom Caps

Filled with Roasted Eggplant and Sun Dried Tomatoes


 Radicchio and Pumpkin Salad

With Apple Cider and Mustard Seed Vinaigrette


Five Grain Croquettes

Served with a Carrot-leek Glaze with Thyme


Pave’ of Roasted Vegetables

 Layers of Roasted Pablano Peppers, Zucchini

Golden Potatoes and Red Bell Peppers and Sharp Cheddar Cheese

Served with Charred Tomato Sauce and Pesto


Cannellini Beans and Brown Rice

Tossed with Red and Yellow Plumb Tomatoes


Sautéed Kale with Caramelized Onions and Garlic


Coconut Milk Panna Cotta

With Raspberry Coulis, Mixed Berries and Toasted Coconut
